Ingredients (12)

175.00 g rice
250.00 g cheddar cheese — diced
125.00 g cherry tomatoes — quartered
1.00 celery stalks — finely sliced
30.00 ml capers
2.00 gherkins — sliced
100.00 g parma ham
SALAD DRESSING
60.00 ml mayonnaise
30.00 ml vinegar — white wine
15.00 ml wholegrain mustard
sea salt and freshly ground black pepper
30.00 ml fresh mixed herbs — finely chopped

Method:

Cook the rice in boiling salted water until tender, drain and rinse under cold water. Mix all the ingredients for the salad dressing together and stir into the rice. Add the rest of the salad ingredients and chill until just before serving.
