Riana's breakfast trifle

  • 250
    Muesli, lower fat, low GI (1 c)
  • 250
    Low fat yoghurt, vanilla-flavoured or plain (1 c)
  • 400
    Fruit, such as pawpaw, apple, mango, berries, guava, etc
  • 250
    Low fat custard, artificially sweetened (1 c)



1. Spoon half of the muesli into a glass bowl or individual dessert glasses.
2. Layer half of the yoghurt, fruit and custard on top of the muesli.
3. Repeat the layers.
4. Refrigerate overnight to soften the muesli, if desired.

If apple or pear is used, drizzle with a bit of lemon juice to prevent discolouration. If banana is used, dip the whole banana with the skin, into boiling water to prevent discolouration.
