Red pepper and mozzarella kebabs

    large French loaf, sliced
  • 4
    red peppers, quartered
  • 2
    x 150 g ball mozzarella cheese, each cut into 8 slices
  • 125
    olive oil
  • 8
    anchovy fillets, drained
  • 2
    green chillies, finely chopped (and seeded if desired)
  • 30
    fresh parsley, finely chopped
  • salt and pepper, to taste
  • skewers


Preheat the oven to 220 °C.
Drizzle peppers with some olive oil and roast until the skins are slightly charred.
Thread a slice of bread onto a skewer, followed by a slice of mozzarella and then a slice of pepper. Repeat this order until the skewers are full.
Brush the skewers with olive oil and grill on the braai until the cheese melts and the bread is toasted.
Chop up the anchovy fillets and add, with the remaining olive oil and the chopped chillies, to a frying pan and cook over medium heat for about one minute.
Season with salt and add the chopped parsley. Serve the skewers with the anchovy sauce drizzled over.
