Really useful poached chicken

  • 2
    whole chicken
  • 1
    onion, chopped
  • 3
    fairly small pieces fresh ginger, crushed
  • 5
    cloves garlic, peeled
  • 1
    red chilli, crushed
  • 15
    coarse salt
  • 10
    black peppercorns
  • 25
    olive oil


Place the chicken in a saucepan. Cover with water and add the remaining ingredients, except the olive oil. Bring to the boil, reduce the heat and simmer for about 25 minutes. Turn the chicken once during the cooking process. Cover with a tight-fitting lid and switch off the heat. Leave the chicken on the hot stove plate for about 1 hour. Remove from the liquid, rub with olive oil and cut up as required.
