Ingredients (8)

1.00 red pepper — halved
1.00 yellow pepper — deseeded and halved
30.00 ml fresh chillies — 573
1.00 onion — sliced
2.00 garlic — cloves, crushed
30.00 ml brown sugar — soft
1.00 orange — zest and juice
500.00 g ravioli — ready-made

Method:

Drizzle half the olive oil on the peppers and roast at 200 °C for 20 minutes or until tender.
Heat remaining oil in a large frying pan and saut&eacute onion and garlic for one minute.
Add sugar, juice and zest and cook for a minute.
Transfer to a blender, add peppers and blend until smooth.
Season to taste.
Cook the ravioli according to the packet instructions.
Serve with the sauce topped with Parmesan and fresh mint.

VARIATION
Add four cooked, sliced chicken breasts to the sauce and serve with pasta.
