Ingredients (12)

30.00 ml butter
1.00 onion — finely chopped
1.00 garlic — cloves, crushed
15.00 ml tomato paste
1.00 aubergine — large, diced
2.00 baby marrows — chopped
1.00 red pepper — large, chopped
1.00 yellow pepper — chopped
1.00 green pepper — large, chopped
2.00 ml fresh thyme — chopped
125.00 ml stock — vegetable
30.00 ml wine — white

Method:

1. Melt butter and sauté onion and garlic. Add tomato paste and cook for 1 minute.
2. Add the rest of the vegetables and herbs. Cook, while stirring, for 5 minutes.
3. Add stock and wine, and cook until vegetables are al dente (crisp to the bite). Season to taste.
