    butter

    onion, finely chopped
  • 1
    clove garlic, crushed
  • 15

    tomato paste
  • 1
    large aubergine, diced
  • 2
    baby marrows, chopped
  • 1
    large red pepper, chopped
  • 1
    large yellow pepper, chopped
  • 1
    large green pepper, chopped
  • 2
    ml
    chopped fresh thyme
  • 125
    ml
    vegetable stock
  • 30
    ml
    white wine
 

Method

 
1. Melt butter and sauté onion and garlic. Add tomato paste and cook for 1 minute. 2. Add the rest of the vegetables and herbs. Cook, while stirring, for 5 minutes. 3. Add stock and wine, and cook until vegetables are al dente (crisp to the bite). Season to taste.
