Ingredients (13)

Filling
500.00 ml raisins
250.00 ml sugar
5.00 ml cornflour
250.00 ml water
125.00 ml apple juice — sparkling
Dough
625.00 ml flour — cake
6.00 ml Bicarbonate of soda
3.00 ml salt
375.00 g butter
375.00 ml brown sugar
1.00 eggs — extra-large
5.00 ml vanilla — essence
625.00 ml oats

Method:

Preheat oven to 180C.
Grease an 18 x 27 cm baking sheet and line with baking paper.
Filling:
Place the raisins and sugar in a food processor and process until smooth.
Transfer to a saucepan and add the cornflour, water and sparkling apple juice.
Heat, stirring continuously, until the mixture comes to the boil and thickens.
Leave to cool.
Dough:
Combine the flour, bicarbonate of soda and salt.
Cream the butter and add the sugar, beating until the mixture is light and fluffy.
Beat in the egg and vanilla essence.
Add the flour mixture and oats.
Press half the dough into the prepared baking sheet, spread with the filling and crumble the remaining dough on top.
Bake for about 30 minutes or until golden brown.
Leave to cool in the pan before cutting into squares.
