Ingredients (8)

400.00 ml flour — self-raising
65.00 ml castor sugar
2.00 eggs — extra-large
300.00 ml milk
300.00 ml water
65.00 ml raisins — seedless
nutmeg — ground, pinch
oil — for frying

Method:

Combine the self-raising flour and castor sugar in a mixing bowl and make a hollow in the centre. Add the eggs, beating well. Mix the milk and water and add gradually, beating constantly. Add the raisins and nutmeg.
Cover and leave the batter to stand for 30 minutes.
Brush the base of a heavy-based saucepan with a little oil, heat until hot and drop spoonfuls of the batter into the pan. Fry on both sides until golden brown and cooked. (Keep warm in the warming drawer.)
Serve hot with ice cream and chocolate sauce.
