Radish and watercress salad with blue-cheese dressing

  • mixture of green salad leaves
  • 2
    handfuls watercress sprigs
  • 2
    bunches of radishes, washed and some sliced
  • 2
    oranges, segmented (optional)
  • 50
    blue cheese, crumbled
  • 45
    plain yoghurt
  • pinch of sugar


Wash and dry lettuce leaves, tearing larger ones. Pick over watercress, removing limp or discoloured leaves. Heap into salad bowl. Add sliced and whole radishes and top with orange segments. Blend dressing ingredients together. Thin with a little milk, if necessary, and season with pepper. Pour over salad just before serving. Serves 4.
