Radicchio, goat cheese and walnut pasta

    heads of radicchio, washed, leaves separated
  • 30
    olive oil
  • 2
    cloves garlic, thinly sliced
  • 0.50
    lemon, the juice
  • salt and milled black pepper
  • 125
    walnuts, toasted
  • 100
    goat cheese
  • 500


Roughly slice radicchio leaves.
Heat oil and sauté garlic for 30 seconds.
Add radicchio and lemon juice.
Sauté for about 30 seconds and immediately remove from heat. Season to taste.
Break walnuts into pieces, crumble cheese and toss all ingredients in freshly cooked, hot tagliatelle.
