Quince stew

  • 3
    large onions, chopped
  • 25

    ground ginger

    fatty mutton, cut into pieces
  • salt
  • pepper
  • 10
    soft brown sugar
  • 12
    medium-sized quinces, peeled and sliced
  • 2
    sprigs rosemary


Sauté the onion in the oil until soft. Add the ginger and cloves and fry for a few minutes. Add the meat and season to taste with salt and pepper. Reduce the heat and simmer until the meat is just about done. Add the sugar and quinces, with the core and pips, and place the sprigs of rosemary on top. Simmer slowly until the meat is tender and the quinces are soft. Serve with rice. Serves 6.
