Ingredients (10)

500.00 g flour — self-raising
salt — pinch
1.00 eggs — extra-large
190.00 ml sugar
250.00 ml raisins — seedless
100.00 g butter
10.00 ml aniseed
5.00 ml ginger — ground
5.00 ml cinnamon — ground
500.00 ml tea — strong, hot and black

Method:

Preheat the oven to 180 ºC and spray a 26 x 9 x 7 cm loaf tin with non-stick spray or butter lightly.
Sift together the self-raising flour and salt. Beat the egg lightly. Place the remaining ingredients, except the tea, in a mixing bowl.
Pour over the hot tea and stir to melt the butter. Leave to cool.
Add the flour and egg to the mixture, stirring until just blended. Turn the batter into the prepared loaf tin, spreading it evenly. Bake for about 45 minutes until pale brown and ready.
Cool slightly in the tin before turning out to cool further. Serve lukewarm with butter and jam if desired.
Makes one large loaf or about 20 thin slices.
