Ingredients (13)

oil — for frying
500.00 g pork — cut into strips
sea salt and freshly ground black pepper
1.00 onion — sliced
1.00 garlic — cloves, crushed
1.00 red pepper — deseeded and cut into thin strips
1.00 carrots — scraped, julienned
2.00 courgettes — sliced into rings
3.00 button mushrooms — sliced
440.00 g pineapple chunks — drained
10.00 ml cornflour
15.00 ml soy sauce
15.00 ml vinegar

Method:

Heat a little oil in a large pan. Lightly season the pork strips with salt and black pepper if desired. Fry in heated oil until lightly browned. Remove from the pan and set aside.
Sauté the onion in the same pan until tender. Add the garlic, red pepper, carrot, courgettes and mushrooms and stir-fry until glossy. Add the pineapple chunks and return the pork strips to the pan.
Mix the drained pineapple juice, cornflour, soy sauce and vinegar. Add to the pan and heat while stirring continually until the sauce thickens slightly and comes to the boil.
Heat for about 3 minutes and season with salt and black pepper if necessary.
Serve with bread rolls.
