Ingredients (12)

500.00 g sausages — pork
oil — for frying
1.00 onion — large, chopped
1.00 celery — chopped
800.00 g tinned tomatoes — whole in juice, chopped
500.00 ml tomato juice — and chicken sock
15.00 ml syrup — maple
10.00 ml cumin — ground
10.00 ml fresh sage — chopped
2.00 ml black pepper — freshly ground
400.00 g red kidney beans
fresh parsley — handful, chopped

Method:

In a heavy-based saucepan, brown the pork sausages in a little heated oil and remove from the pan.
Sauté the onion and celery in the pan fat until tender. Add the tomatoes, tomato juice and/or stock and maple syrup, and season with cumin, sage and black pepper.
Heat until the mixture begins to simmer, reduce the heat slightly and simmer over medium heat for 20 to 30 minutes until the sauce thickens and has been reduced by half.
Add the kidney beans, season if necessary and heat through.
Sprinkle with parsley and serve with fresh bread for mopping up the juices.
