    slices white bread, crusts removed
  • cold water
  • 3
    extra-;large eggs, whisked
  • 5

    grated Cheddar cheese
  • 1
    small onion, grated
  • 5
    chopped fresh parsley
  • salt and freshly ground black pepper
  • oil for shallow-;frying


Soak the bread in a little water until soft. Press out the excess water and mash the bread with a fork. Add the remaining ingredients and mix. Season well and shallow-fry spoonfuls of the mixture in heated oil until golden brown and done. Drain on paper towelling and serve with fried sausages and a homemade tomato sauce.
