Ingredients (5)

375.00 ml water — boiled
300.00 g sugar
50.00 g cocoa powder
125.00 g sponge fingers
160.00 g coconut

Method:

Place the boiling water, sugar and cocoa in a saucepan and heat slowly until the mixture comes to the boil. Stir frequently to dissolve the sugar before the mixture comes to the boil. Boil for 5 minutes. Cool slightly. Soak the sponge fingers in the syrup long enough for them to absorb the syrup. Roll the biscuits in coconut.
Makes 24 lamingtons.
