Ingredients (7)

4.00 eggs — jumbo, yolks only
75.00 g castor sugar
2.00 ml cinnamon — ground
5.00 ml vanilla — essence
150.00 ml sherry
125.00 g strawberries — halved
cinnamon sugar — for serving

Method:

Place egg yolks, castor sugar, cinnamon and vanilla essence in a heatproof bowl. Whisk until pale, thick and creamy.
Place bowl over a saucepan of simmering water and continue to whisk, gradually adding sherry, until mixture is frothy and thickened.
Dip dampened rims of chilled serving bowls into cinnamon sugar.
Divide strawberries between bowls, pour egg mixture over and serve immediately.
