Quick cheesecake

  • 500
    cream cheese
  • 2
    cans Nestlé condensed milk
  • 125
    lemon juice


Preheat the oven to 180 ºC (350 ºF). Spray a 28 x 18 x 5 cm pie dish with non-stick spray. Drain the cream cheese by spooning it into a piece of cheese-cloth and placing it in a sieve over a large mixing bowl. Press the cream cheese with a wooden spoon to remove most of the liquid, or leave it to drain for a few hours. Blend the drained cream cheese with the condensed milk and lemon juice. Beat lightly to blend well. Turn into the prepared pie dish and bake for 15 minutes. Cool completely and chill overnight. Makes a medium-sized cheesecake.
