Quick cabbage and carrot pickle

    shredded cabbage
  • 1
    carrot, cut into julienne strips
  • 15
  • 375
    white grape vinegar
  • 90
    white sugar


Place the cabbage and carrot strips in a glass bowl, add 10 ml (2 t) of the salt and 1 litre water and cover with plastic wrap. Microwave for 5 minutes on 100 per cent power. Drain and set aside. Heat the vinegar, remaining salt and sugar until the sugar has dissolved. Bring to the boil and add the vegetables. Bring to the boil once more, simmer for 1 minute and spoon into clean, sterilised jars while still boiling hot. Seal with sterilised lids. Makes about 750 ml pickles.
