Ingredients (11)

30.00 ml butter
250.00 g bacon — streaky
250.00 g onion — sliced into rings
250.00 g fresh mushrooms, sliced — wiped with wet cloth
700.00 g potatoes — cooked, cut into cubes
125.00 ml stock — chicken
5.00 ml dried sage
salt
freshly ground black pepper
4.00 eggs — large
15.00 ml fresh parsley — chopped

Method:

Heat the butter in a large pan with a lid. Remove the rind from the bacon. Sauté the bacon and the onions in the butter until the onions are soft. Add the mushrooms and sauté until most of the moisture has evaporated. Add the potato cubes and sauté for a short while. Add the chicken stock and flavour with sage, salt and pepper to taste. Allow to simmer for one minute. Make four hollows in the mixture and crack an egg into each. Put the lid on the pan, lower the heat and cook until the eggs are ready. Sprinkle with parsley and serve immediately.
Serves 4.
