Ingredients (13)

1/3 cup pesto — basil
1 cream cheese
3 Tbs pine nuts — toasted
2 mackerel — smoked
1/2 cup crème fraîche
1/2 lemon — zest and juice
1 bread — contry loaf
4 garlic — medium cloves
1 cup calamata olives
1/2 cup feta cheese — diced
4 cup vegetables
1 pnp finest extra-virgin olive oil — glug
1 pinch salt and freshly ground black pepper

Method:

Spoon cream cheese into serving bowl or glass and top with pesto, a drizzle of olive oil and a smattering of pine nuts.

Skin mackerel and mash with a fork, fold through crème fraîche, lemon juice and zest.

Brush bread slices with olive oil. Char-grill and rub with garlic.

Wash and trim baby vegetables

Arrange all ingredients on a platter and serve.
