Pumpkin fritters

    cooked and drained pumpkin, mashed
  • 30
    cake flour
  • 1
    large egg, separated
  • 5
    baking powder
  • pinch salt
  • butter or sunflower oil
  • cinnamon sugar
  • lemon slices


10 minutes
Combine pumpkin and flour. Add the beaten egg yolk and fold in stiffly beaten egg white, baking powder and salt. Heat butter in a frying pan and drop in spoonfuls of pumpkin. Fry gently for about five minutes on each side. Serve hot, sprinkled with cinnamon sugar (made from 10 ml cinnamon and 130 ml sugar) and lemon slices.
