Ingredients (10)

375.00 ml flour — wholewheat
10.00 ml Baking powder
5.00 ml mixed spice — ground
salt — pinch
80.00 ml oats
160.00 ml brown sugar — soft
250.00 ml pumpkin — cooked, mashed
190.00 ml prunes — chopped
1.00 eggs — lightly beaten
125.00 g butter — melted

Method:

Preheat the oven to 180 ºC (350 ºF). Spray a muffin pan with non-stick spray. Mix the wholewheat flour, baking powder, spices, salt, oats and brown sugar in a large mixing bowl. Add the pumpkin, prunes, egg and butter and stir until just mixed. Fill the muffin hollows two-thirds full and bake for 25-30 minutes or until cooked. Let the muffins cool, then turn onto a wire rack to cool completely. Serve warm or cold.
Makes 10 large or 12 small muffins.
