Ingredients (8)

600.00 g flour
5.00 ml salt
10.00 g dried instant yeast
50.00 ml sugar
45.00 ml butter
2.00 eggs — just the yolks
125.00 ml water — warm
50.00 ml oil — for deep frying

Method:

1.Sift the flour and add the salt, yeast and sugar. Mix to combine well.
2.Rub the butter into the flour. Make a well in the centre and add egg yolks.
3. Add the water and mix well until mixture is soft. Cover and leave to rise for 15 minutes.
4. Heat oil in a pan over a moderate heat. Scoop a little of the mixture at a time in the palm of your hand, forming a small ball.
5. Drop balls into oil and fry until cooked through. Remove from pan and roll in sugar. Serve hot.
