Puff pastry tartlets

  • 250
    seedless raisins
  • 65
    soft brown sugar
  • 1
    orange, juice and rind
  • 400
    frozen puff pastry, defrosted
  • 1
    egg, separated
  • sugar for sprinkling


Preheat the oven to 220 ºC (425 ºF). Spray a baking sheet with non-stick spray. Mix all the ingredients for the filling in a saucepan. Heat slightly until the sugar has melted and cool. On a lightly floured surface, roll out the pastry until slightly thinner. Cut out circles 10 cm in diameter. Spoon a tablespoonful of the filling on each circle. Brush the sides of each circle with whisked egg white and close. Press the sides down firmly with a fork and brush with whisked egg yolk. Sprinkle the tartlets with a little sugar and place on the baking sheet. Bake for 15 to 20 minutes or until done and golden brown. Cool and store in an airtight container.
