400.00 g puff pastry — defrosted
1.00 eggs — whites only, lightly beaten
50.00 g cheddar cheese — grated
parmesan cheese
paprika
100.00 g butter — melted
15.00 ml curry powder
30.00 g potatoes — crisps, crushed

Method:

Preheat the oven to 200 ºC (400 ºF). Spray two baking sheets with non-stick spray.
Roll out the puff pastry till about 3-5 mm thick. Brush half the pastry with the beaten egg white.
Combine the Cheddar and Parmesan cheese and sprinkle over the pastry half that has been brushed with egg white. Cut the pastry into long 2 cm wide strips and then cut each strip into shorter lengths of about 8 cm each. Place on the baking sheet and bake for 7-10 minutes or until well risen and golden. Sprinkle the straws with paprika as soon as they come out of the oven. Cool and remove from the baking sheet.
Blend the butter and curry powder and spread over the remaining pastry half. Sprinkle the crushed potato crisps over the pastry, ensuring that it is well covered. Cut into strips and place on the prepared baking sheet. Bake for 7-10 minutes or until well risen and golden. Cool and remove from the, baking sheet. Serve as a cocktail snack.
Makes about 50 straws.
