Ingredients (5)

400.00 g puff pastry — defrosted
500.00 ml cream
1.00 instant pudding — vanilla
100.00 ml icing sugar
water

Method:

Preheat the oven to 200 ºC. Roll out the puff pastry until slightly thinner. Cut out small squares, triangles or any shapes you desire. Place the shapes on greased baking sheets and bake for about 10 minutes until risen and golden brown. The cooked pastry will form two definite layers. Remove the top layer of each and allow to cool. Beat the cream until almost stiff. Add the instant pudding and beat until well mixed. Leave for about five minutes to set, then scoop into a piping bag or use a spoon to place a little of the filling on the lower layers. Cover with the top layers. Sift the icing sugar and add just enough water to form a soft icing. Spoon a little icing over each pastry puff or simply sprinkle with castor sugar. Serve immediately.
Makes 25-30 slices.
