Pressed Rolls

  • 0.50
    a roasted chicken
  • 2
    boiled eggs, chopped
  • 125
  • 2
    salt and freshly ground black pepper
  • 8
    soft white rolls, buttered
  • 8
    slices chorizo
  • 8
    slices prosciutto
  • 8
    slices smoked mozzarella cheese


Break the chicken into pieces and mix in the chopped egg and mayonnaise. Season with salt and pepper.
Stuff 4 of the rolls with chicken-mayonnaise mixture and chorizo slices.
Fill the other 4 rolls with prosciutto and slices of smoked mozzarella.
Wrap the rolls in wax paper and place all the rolls on top of one another and press down with a breadboard or something heavy to allow the flavours to combine.
