Preserved chilli pears

    red chilli, halved
  • 3
    rosemary sprigs
  • 1
    bay leaf
  • 1
    cinnamon stick
  • 2
    lemons (rind and juice)
  • 225
    castor sugar
  • 300
    red wine

    small pears

Place all ingredients, except pears, in a pan. Pour in 600 ml water and heat to dissolve sugar. Boil for 5 minutes. Peel pears, leaving stalks intact. Place in pan and cover. Bring to boil, then reduce heat to simmer for 20 minutes. Remove pears and place in 1 or 2 sterilised preserving jars. Boil cooking liquid for 5-8 minutes until reduced by half. Cool, pour over pears and seal. Serves 6.
