Prawns wrapped in pancetta

    jumbo prawns, peeled and deveined

    paper-thin slices pancetta, not too lean (streaky bacon can be substituted)

Preheat oven to 220 °C.
Warm the olive oil in a large sauté pan over medium/high heat.
Add the shrimps and sauté quickly till they turn pink, 2 to 3 minutes. Transfer to a plate.
Add the cognac and deglaze the pan, scraping up all the browned bits.
Set the pan aside off the heat.
Wrap each prawn in a slice of pancetta and arrange on baking sheet.
Place in the oven just long enough for the fat to start to melt, 2 to 3 minutes.
You can turn the grill on for a minute to make the pancetta crisper.
Meanwhile reheat the pan juices.
When prawns are ready transfer to individual serving plates, top with juices and serve immediately, on a few butter lettuce leaves, and let everyone have their own morsels to relish.
