Ingredients (12)

24.00 prawns — frozen
oil — for frying
salt and freshly ground black pepper
lemon
MARINADE
125.00 ml fresh chillies — 573
15.00 ml lemon — zest only
125.00 ml lemon juice
2.00 garlic — large cloves, crushed
2.00 fresh chillies — chopped
15.00 ml fresh ginger — grated
2.00 ml turmeric
2.00 ml paprika

Method:

Cut open the shells of the prawns along their backs and remove the dark veins. Place the prawns in a glass or ceramic dish.
Mix all the ingredients for the marinade and pour over the prawns. Leave them to marinade for at least 3 hours, turning once or twice. Drain, reserving the marinade.
Heat a little oil in a pan or wok until very hot and stir-fry the prawns in batches of 6 until they turn pink and crisp on the outside. This will take about 3 to 4 minutes for each batch. Remove from the pan or wok and set aside.
Pour the marinade into the pan and bring to the boil. Return the prawns to the boiling marinade and stir-fry for another 2 minutes. Season well with salt and freshly ground black pepper and a generous squeeze of lemon juice. Serve immediately with fresh bread.
