Prawn, cheese, mushroom and bacon sauce

    grated cheddar cheese
  • 1
    bay leaf
  • salt and pepper
  • dash
  • a knob of butter
  • 150
    bacon, diced
  • 100
    sliced mushrooms
  • 1/2
    peeled & de-veined prawns
  • 1
    clove garlic, finely chopped

Melt the butter, add the flour and bay leaf.
Stir on a medium to hot heat until the flour is cooked and the mixture has turned golden in colour.
Add the milk, bit by bit while stirring continuously.
Once the sauce begins to thicken, add the grated cheese, salt, pepper and nutmeg. 
Stir until the cheese has melted and you have a nice tasty cheese sauce.
Remove the bay leaf and take it off the heat and set aside.
Melt the butter, add the garlic and bacon and cook until it starts to brown then add the mushrooms and cook until tender.
Finally add the prawns and cook for about 2 minutes, not too long you don’t want your prawns to go hard.
Add the cheese sauce.

Perfect as a pancake filling, a topping for baked potatoes, pour over a steak or use it in a savoury muffin.
