Prawn bites

  • 2
    red chillies, chopped
  • 1
    clove garlic, finely chopped

    fresh coriander, chopped
  • 30
    brown sugar
  • 5
    fish sauce (Nam Pla)
  • 50

    large frozen prawns
  • 15
    lemon juice
  • slices of lemon or lime and chopped fresh coriander for decoration


5-15 minutes
Place the chillies, garlic, chopped coriander, brown sugar, fish sauce and water in a wok and bring to the boil. Season with salt. Boil for about 10 minutes to reduce. Add the prawns and lemon juice, shaking the wok to coat the prawns with the sauce. Heat until the prawns are just cooked, 5 minutes at the most. Serve hot with lemon slices and sprinkle with chopped coriander. Alternatively, thread the prawns and lime slices onto skewers.
