Ingredients (9)

500.00 g prawns — raw
30.00 ml fish sauce
60.00 ml lemon juice — or fresh lime juice
5.00 ml brown sugar
1.00 garlic — cloves, crushed
5.00 ml fresh ginger — grated
2.00 red chilli — thinly sliced
30.00 ml fresh mint
lime — or lemon, sliced

Method:

Peel prawns, leaving the tail. Remove veins. Drop into simmering salted water until pink. Drain.
Mix sauce, juice, sugar, garlic, ginger, chillies and freshly ground black pepper.
Toss prawns in dressing.
Add mint and serve on a bed of lettuce greens. garnish with lime slices.
