Prawn and mint salad

  • 500
    raw prawns
  • 30
    fish sauce
  • 60
    lime or lemon juice
  • 5
    brown sugar
  • 1
    clove garlic, crushed
  • 5
    fresh ginger, grated
  • 2
    fresh red chillies, finely sliced
  • 30
    fresh mint leaves
  • lime or lemon slices to garnish


3‑5 minutes
Peel prawns, leaving the tail. Remove veins. Drop into simmering salted water until pink. Drain. Mix sauce, juice, sugar, garlic, ginger, chillies and freshly ground black pepper. Toss prawns in dressing. Add mint and serve on a bed of lettuce greens. garnish with lime slices.
