Potluck pudding

    slices white bread, crusts removed

    peach halves, sliced
  • 1
    banana, sliced
  • 5
    glacé cherries
  • 20
    brown sugar
  • 1
    mixed spice
  • 2
    ground ginger

Preheat the oven to 180 ºC (350 ºF). Grease an ovenproof dish with margarine. Arrange the bread slices on the base of the prepared dish. Arrange the peach and banana slices and cherries on top of the bread. Sprinkle with the brown sugar. Beat the mixed spice, milk and eggs together. Carefully pour the egg mixture over the bread and fruit and bake for about 20 minutes or until the egg mixture is set. Serve hot with custard, cream or ice cream. The pudding is also delicious served cold. Serves 4.
