Potatoes with mustard mayonnaise

  • 4
    large potatoes, peeled and cut into thick slices
  • salt and freshly ground black pepper
  • 100
  • 30
    prepared wholegrain mustard
  • 250
    mozzarella cheese, grated


Preheat the oven grill. Spray a baking sheet or grease well. Arrange the potato slices in the bottom of a microwaveproof dish. Sprinkle with salt and black pepper. Cover and microwave for about 11 minutes on 100 per cent power or until the potatoes are tender. Place the cooked potatoes on the prepared baking sheet. Mix the mayonnaise and wholegrain mustard. Brush the potato slices with the mustard mixture. Sprinkle with the cheese. Place under the oven grill and grill until golden brown and the cheese has melted. Serve immediately. Serves 3-4.
