Potatoes with lemon

    medium-sized potatoes, thinly sliced
  • 4
    garlic cloves
  • 60
    olive oil
  • 3
    large lemons, juice of
  • bay leaves
  • salt and freshly ground black pepper


60 minutes
Preheat oven to 200 °C.
Place the potatoes in an ovenproof dish.
Squash the garlic cloves and add them whole.
Pour over the olive oil and lemon juice, and add a couple of bay leaves, a little salt and a generous grinding of black pepper.
Bake for about an hour or until soft and slightly crisp on top.
Stir once or twice during cooking.
