Potato with tuna filling

    onion, finely chopped
  • oil
  • 400
    tuna, drained
  • salt and freshly ground black pepper
  • chopped parsley
  • 250
    grated Cheddar cheese


Preheat the oven to 180 ºC (350 ºF). Boil the potatoes in salted water until tender. Fry the onion in a little oil until tender. Add 1-2 cans tuna and season with salt and pepper and a little parsley. Cut a cross on top of each potato and press it at the bottom so it opens on top. Spoon a little of the tuna mixture on top, sprinkle with cheese and bake for 20 minutes or until the cheese has melted. Serves 4.
