Potato skewers

  • 500
    baby potatoes, halved
  • olive oil
  • 2
    yellow or red peppers, sliced into strips
  • salt, pepper and fresh basil leaves
  • pesto sauce
  • cottage cheese, cream or yoghurt


30 minutes
Preheat the oven to 230 °C.
Boil the baby potatoes until done, drain and place in a roasting pan with a little olive oil.
Add the yellow or red peppers.
Season with salt and pepper and roast for 15 to 20 minutes or until the potatoes are golden brown.
Thread potato, pepper strips and basil leaves onto cocktail sticks and serve with a pesto dip (mix pesto sauce with cottage cheese, yoghurt or thick cream).
