Ingredients (10)

8.00 potatoes — small
185.00 g tuna — tinned in brine
10.00 olives — black, halved
8.00 radishes — halved
1.00 onion — thinly sliced
SALAD DRESSING
2.00 eggs — just the yolks
30.00 ml oil
30.00 ml water
5.00 ml fresh thyme
sea salt and freshly ground black pepper

Method:

Boil the potatoes in their jackets in a little salted water until soft. Remove the skins while still hot and slice.
Drain the tuna and flake lightly with a fork.
Arrange all the ingredients in a salad bowl.
Place the salad dressing ingredients in a mixing bowl and whisk until well blended.
Pour over the salad and chill for about one hour before serving to allow the salad to absorb the flavour of the dressing.
Serve with rolls or wholewheat bread.
