Potato parcels

    medium size potatoes, scrubbed
  • 4
    sprigs fresh thyme
  • 1
    small lemon, rind sliced into strips
  • 30
    olive oil
  • coarse sea salt


Preheat the oven to 190 ºC. Cut out 2 large circles from a sheet of baking paper and place on a baking tray. Place 3 potatoes on each circle and divide the fresh thyme, lemon rind and olive oil among the potatoes. Season well with sea salt. Wrap the potatoes in the baking paper, tucking in the loose ends, and bake for 40 minutes or until soft and done.
