Ingredients (11)

80.00 ml lard
7.00 onion — finely chopped
2.00 garlic — cloves, finely chopped
5.00 ml fresh marjoram — chopped
5.00 ml caraway seeds — or cumin seeds, crushed
75.00 ml paprika
1.00 Litres water
9.00 potatoes — peeled and diced
0.00 salt and freshly ground black pepper — to taste
80.00 ml sour cream
60.00 ml fresh parsley — chopped

Method:

Heat the lard in a large saucepan and fry the onions until golden brown.
Add the garlic, marjoram and caraway or cumin seeds and stir-fry for one minute.
Remove the saucepan from the heat, add the paprika and mix well (do not fry the paprika with the onions as it will become bitter).
Add the water, return the saucepan to the heat and cook uncovered for 20 minutes.
Add the potatoes and cook until they are soft.
Season with salt and pepper to taste, remove from heat and stir in the sour cream.
Garnish with the chopped parsley just before serving.
