Potato cakes

  • 6
    medium potatoes
  • 100
    Parmesan cheese, grated
  • 3
    eggs, beaten
  • salt and pepper to taste
  • grated nutmeg


Scrub potatoes with a brush, and boil until almost cooked. Place overnight in refrigerator, peel and grate roughly. Mix in 100 ml of finely grated Parmesan cheese, eggs and seasoning. Spoon mixture into well-greased muffin pans and bake at 200 ºC until done.
