Potato bake with bacon

Ingredients (7)

4.00 potatoes — boiled
250.00 g bacon — finely chopped
2.00 garlic — cloves, crushed
1.00 tomatoes — peeled and finely chopped
sea salt and freshly ground black pepper
175.00 ml yoghurt — plain
125.00 ml cheddar cheese — grated

Method:

Preheat the oven to 180ºC (350ºF). Spray a small oven dish with nonstick spray.
Skin the potatoes and slice them. Arrange the slices in the bottom of the oven dish.
Fry the bacon until crisp and set aside. Sauté the onion in the same pan until tender and add the garlic and tomato. Season with salt and freshly ground black pepper to taste. Simmer until a purée is formed. Pour over the potatoes and sprinkle with the bacon. Pour over the yoghurt and bake for 20 minutes.
Sprinkle with cheese if desired, return to the oven until the cheese has melted and serve with a salad.
Serves 3.
