Potato bake

    potatoes, scrubbed clean and thinly sliced
  • 1
    large onion, sliced
  • 10
    fresh thyme
  • salt and freshly ground black pepper
  • 1
    chicken stock cube
  • 600
    boiling water


Preheat the oven to 160 ºC (325 ºF) and spray a medium oven dish with non-stick spray. Arrange the potatoes and onions in alternating layers in the oven dish, sprinkling each layer with thyme. Season with salt and pepper. Pour over the stock cube, dissolved in the boiling water and bake for 1-1 1/2 hours or until done and crisp. Serve hot with meat and vegetables. Serves 6-8.
