Ingredients (8)

800.00 g potatoes — boiled
125.00 g bacon — streaky
250.00 g button mushrooms
60.00 ml fresh parsley — chopped
15.00 ml oil
sea salt and freshly ground black pepper
60.00 g butter
eggs

Method:

Drain, peel and roughly cut potatoes.
Remove rind and rust of bacon and cube.
Heat oil in a large frying pan, add bacon and cook for 3 to 4 minutes.
Slice mushrooms and cook for 5 minutes.
Carefully stir in cut potatoes and butter, heat through completely.
Adjust seasoning, sprinkle on parsley.
Serve with eggs done as you like them.
