Pot-roasted turkey

    onions, finely chopped
  • 4
    ripe tomatoes, peeled and finely chopped

    cayenne pepper

    tomato paste

    semi-sweet wine
  • salt to taste
  • 1
    self basting turkey, about 3 kg, completely defrosted and bag with giblets removed

Sauté the onion in a little oil till soft. Add the tomatoes and simmer till a nice thick sauce is formed. Add the remaining ingredients, except the turkey, and simmer for 5 minutes. Place the turkey in a large saucepan, pour aver the sauce and simmer for about 3 hours or till the turkey is done, or pressure cook for one and a half to two hours. Take care that the bird does not burn. Serve the turkey with the sauce. Serves 8.
