Portuguese beef roast

  • 1
    beef silverside
  • 200
    readymade garlic peri-peri marinade
  • 250
    beef stock
  • 125
    red wine
  • 4
    sweet potatoes, peeled and cubed
  • 4
    medium onions, peeled


1. Place joint in a dish suitable for roasting and pour over marinade. Leave in cool place to marinate for from 30 minutes to 4 hours. Add beef stock and wine to dish, cover and roast at 160 ºC for 2-2 1/2 hours or until the meat is tender. Thicken sauce with a little cornflour if necessary.
2. Slice meat and return to dish. Serve with crusty Portuguese bread to mop up the sauce.
