Pork with peanut butter sauce

Ingredients (13)

500.00 g pork — thick rib, chump or leg
salt and freshly ground black pepper
oil
1.00 red pepper — deseeded and cut into strips
1.00 garlic — cloves, crushed
10.00 ml fresh ginger — grated
10.00 ml coriander — ground
5.00 ml cumin — ground
30.00 ml brown sugar — soft
lemon — zest and juice
45.00 ml soy sauce
15.00 ml Worcestershire sauce
60.00 ml peanut butter — crunchy

Method:

Cut the pork into strips and season well with salt and pepper. Fry in heated oil until just brown on the outside. (Fry for about 1 minute only, otherwise the meat will become tough and dry.) Remove from the pan and set aside.
Sauté the red pepper, garlic and ginger in a little oil until soft. Add the coriander and cumin and stir-fry for another minute. Reduce the heat, add the remaining ingredients and simmer until a flavoursome sauce has formed. Return the meat strips to the pan and heat until just warm.
Serve immediately with pasta or rice.
Serves 3-4.
