Ingredients (11)

75.00 ml sunflower oil
400.00 g pork fillets — thinly sliced
90.00 g cashew nuts — chopped
4.00 spring onions — sliced
4.00 garlic — cloves, crushed
1.00 fresh ginger — grated
4.00 red chillies — chopped
3.00 lime — zest and juice
30.00 ml fish sauce
45.00 ml fresh mint — shredded
45.00 ml fresh basil — shredded

Method:

Heat the oil until very hot in a large frying pan or wok. Add pork and stir-fry for 2 minutes.
Toss in cashew nuts, spring onions, garlic, ginger, chillies, citrus peel and juice, fish sauce, mint and basil and stir-fry for a further minute.
Serve with fragrant rice.
